Ingredients
  

  • 1 cup quinoa
  • 2 cups mixed vegetables (e.g. bell peppers, zucchini, eggplant, tomatoes)
  • 1 tbsp olive oil
  • 1 tbsp dried thyme
  • ½ tbsp dried basil
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (204°C).
  • Rinse the quinoa in a fine mesh strainer and drain well.
  • In a mixing bowl, toss the mixed vegetables with the olive oil, dried thyme, dried basil, salt, and pepper.
  • Spread the seasoned vegetables on a baking sheet and roast for 25-30 minutes, until tender and lightly browned.
  • While the vegetables are roasting, cook the quinoa according to the package instructions.
  • In a large bowl, mix the cooked quinoa with the roasted vegetables.
